We started our day with a tour of the Jumpin’ Good Goat Dairy.
Their ‘Barely Legal’ goat cheese. It is aged in whiskey from the distillery in Buena Vista and then packaged with a marijuana leaf. In the cheese making area they finished with the cheese we saw in this vat yesterday and it is hanging in the cheese cloth bags behind the woman. She is Dawn’s daughter and general manager of the dairy.
Preparing cheese. They sell their cheese whole sale to Kings Soopers, Safeway and Whole foods. On the tour we fed some of the goats.
We also toured the ‘cave’ for aging the cheese. It is 12 feet below the ground. It stays at a constant temperature of 62 degrees and the hard cheddars age for up to 6 years here.
John and our tour guide Karen in the cave. They have two pigs like this one. They feed all the waste to them. The cheese and the pigs are all organic. This pig is eating whey, which is the watery part of cheese that is left after they take the cheese curds out. They then sell the pigs too later.

We visited the Deerhammer distillery and tasted whiskey. This is the same whiskey in the Barely legal goat cheese. We also went to Mount Princeton hot springs. I have been coming here for years. It is now updated and remodeled. There is a new pool and spa across the river from the old, a bunch of new cabins and an event building.
The bus parked next to Cathy Frasier’s log cabin on the river. John cooked us a wonderful dinner of calzones. They were trying to eat while I was taking a photo.
